What exactly does SinBloqueos do?

When it detects that Cloudflare is being blocked in Spain, it disables the proxy (the "orange cloud") on the A, AAAA and CNAME records of your domains, so your domain resolves directly to your server instead of to Cloudflare's blocked IPs. When the block ends, it turns it back on.

Do I need to give you my Cloudflare password?

No. Just an API Token with DNS-edit permission, which you can revoke at any time from your Cloudflare account.

What happens to my MX, TXT or NS records?

We never touch them. We only manage A, AAAA and CNAME.

Can I cancel anytime?

Yes, no contracts. Cancel from your billing dashboard and we stop touching your domains immediately.
